Our Family's Favorite Cold Pasta Recipe

I’ve been needing to share the recipe for our cold pasta dish, outside of DMs, for quite some time. It’s a family favorite …and you will almost always find it in our fridge. My girls absolutely love this meal too, and I pack it with as many veggies as possible. This is a great dish to sneak them into. The beauty of this dish is that you can make a big batch and keep it in the fridge for a few days. Scoop into a bowl and you have lunch ready to go, in a matter of seconds! I’m all about maximizing time and having this dish on hand saves me so much time on a weekly basis! Plus it’s incredibly tasty too…I’m always craving it! I swear the Olive Garden dressing is what makes this pasta better than any I’ve ever tasted! Who doesn’t love their salad dressing. It’s my secret ingredient, and I love that Walmart carries it!

This dish is super customizable and you can easily add and subtract to your taste level. When I first started making this a few years back I’d add in mozzarella balls or feta. One day I forget it and it was still so good! I didn’t realize till days later actually, and since cheese is my weakness, cutting it out permanently, helps me eat a lil healthier. I also tried the chickpea pasta a few times…it’s an acquired taste, but a healthier option, and not bad actually.

Blank Family Pasta Salad

1 box of Rotini Pasta

4-5 celery ribs (diced)

1/2 medium red onion (finely diced)

1/2 red pepper (diced)

1/2 yellow pepper (diced)

1 large cucumber (chopped)

1 box of grape tomatoes (chopped)

2 cans of pitted black large olives (chopped)

12 oz Olive Garden Italian Dressing (the secret ingredient that takes it to the next level)

You can add in mozzarella balls or crumbled Feta…nowadays, I leave out the cheese, but it’s tasty with too

Cook pasta al dente and drain

Chop all the ingredients above and add to the noodles

Add approx. 12 oz of the dressing, toss it all together and chill

Enjoy cold straight from the fridge….It’s the tastiest…especially for lunches on hot summer days.

Adjust the above for your taste…I try to pack in as much veggies as possible, so we eat more in a sneaky easy way…Grayson and I snack on the olives while making it…so its technically a little less…they are our fav!
